INTRODUCTION
 Pests can pose serious problem for food establishment.
 It can also damage food, supplies and facilities

 Ability to spread disease, including foodborne illness.

 Examples:
 Cockroaches
 Flies
 Insects (beetles, ants, termite, spider, bees)
 Rodent
 Birds
 once pest have come to the food establishment
(infestation) it is difficult to eliminate.
 Developing and implementing IPM program is the key

 Using :

i. prevention measures to keep pest from entering the


establishment &
ii. control measures to eliminate any pests that do get inside
 It best to work with a licensed pest control operator
(PCO).
5 STEPS OF IPM
 Inspection
 Identification

 Sanitation

 Application of two or more pest management procedures

 Evaluation of effectiveness through follow-up


inspections.
 Prevention is critical in pest control
 IPM has 3 basic rules:

i. Deny pest access to the establishment


ii. Deny pest food, water and a hiding or nesting place
iii. Work with licensed PCO to eliminate pest that do enter

 Deliveries
 To prevent pest from entering the establishment:
- use reputable supplier
- check all deliveries before they enter the establishment

 Door, windows and vents


 Screen all windows and vent
 Install self closing device & door sweep
 Install air curtain above or alongside door
 Keep all exterior opening closed tightly
 Pipes
 Use concrete to fill holes or sheet metal to cover openings
around pipes
 Install screen over ventilation pipes and ducts on the roof
 Cover floor drains with hinged grates to keep rodent

 Floor & walls


 Seal all cracks in floor and walls
 Properly sealed space or cracks where stationary equipment
is fitted to the floor.
2. Deny pest food & shelter
 Dispose of garbage quickly and correctly
 Store recyclables in clean, pest proof containers
as far from your building as local regulations
allow
 Store all food and supplies properly and as
quickly as possible.
 Clean the establishment thoroughly

Few pest problems are solved by spraying pesticides

 Make sure the PCO is licensed or certified by your state, as
require by federal law
 Ask the PCO if they belongs to any professional organization.
 Ask for proof of insurance
 Weigh all factors, not just price
